FMGT 211 Food Production I

Credit 3
This introductory course in food production includes basic foods nutrition, overview of the kitchen brigade, culinary terminologies, products identification, cooking techniques, knives skills, utensils and equipment usage and sanitary care. Also, produce, present and evaluate cooked products. Prerequisite(s): HMGT 101 , except for PGA Golf Management majors. The course format is two 50 - minutes lectures and two - hour laboratory periods per week. Chef knives set and appropriate commercial kitchen uniforms are required.
